‘Kickstart’ Pancakes

No, as a matter of fact, you don’t need egg, sugar, oil and dairy milk for pancakes.

What’s great about this vegan recipe is it’s just two servings, maybe three. The fruit component is a flavorful, nutritious enhancement.

  • 1/3 cup fruit, optional
  • 2/3 cup flours (wheat, rye, buckwheat or other flours, except cornmeal, or a mixture of two flours)
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon, optional
  • 2/3 cup plant milk, such as almond or soy
  • 1 teaspoon vanilla, optional
  • More plant milk
  • Vegetable oil
  • Syrup, berries, rough-chopped nuts, other toppings

Fruit can be chopped or grated and added to the batter OR sliced for placing atop pancakes. Grating one small-to-medium unpeeled apple, cored, to mix into batter is recommended. Berries or sliced fruits are to be sprinkled onto batter when first spooned onto skillet.

Heat large nonstick skillet on medium. Preheat oven to 200 degrees.

Mix the dry ingredients in a medium bowl. Stir in plant milk and optional vanilla and optional chopped or grated fruit. To create a milkshake consistency, add as needed more plant milk, 1 Tablespoon at a time.

Brush onto hot skillet 1/2 Tablespoon of oil. Ladle onto it 3-4 pancakes. Immediately top with optional berries or sliced fruit. Cook about 3 minutes, until edges bubble and pull slightly from pan. Flip and cook 3-4 minutes until well-browned. Place pancakes on ungreased cookie sheet or pizza pan in 200-degree oven to keep warm while cooking up the rest of the batter.

Makes 8-10 small-to-medium pancakes, serving 2-3 people. Recipe can be doubled.

Serve with syrup, berries, nuts or other favorite nondairy toppings.

Notes: When topping with berries or sliced fruit, leave batter exposed in places to rise and brown properly. Mixing berries into batter can create off colors. Cornmeal is not recommended, as it takes a long time to soften. The batter loses its leavening power on sitting, so prepare just before cooking. Leftover pancakes are great reheated.
